what's for dinner, week 42

what we had for dinner, week 41

We bought lots of fresh produce during the weekend, with no particular plan of how to use it. So this week I will have to try my best to use everything before it goes bad. I think this menu will do the trick - as long as we actually follow through... 

Monday: beef stew with potato, carrot, parsnip, red onion, shallot, garlic, mushroom and fresh parsley (ps: my stew)
Tuesday: baked salmon with seafood and fish spice mix from Santa Maria + apple avocado salad 
Wednesday: pulled leg of lamb (my first attempt at this technique, using slices of leg of lamb from the freezer, which probably isn't the ideal cut for this, but I will give it a try anyway + this recipe), creamed cabbage and boiled potatoes 
Thursday: pan fried chicken filets, roasted Brussel sprouts and potato wedges, kale pesto 
Friday: lamb shanks from Tjore Gardsmat, bought at Bondens Marked last weekend + a tomato salad

What we actually had for dinner last week (pictured above):

Monday: chicken madras from Raske Retter
Tuesday: spiced pumpkin soup with bacon, from Nigel Slater's "the kitchen diaries" + baguette with butter - the pumpkin was rather bland, so I added carrot and potato for more flavor and texture 
Wednesday: vegetable soup with cod and shrimp, from Glad i mat + salmon 
Thursday: roasted vegetables (pumpkin, potato, carrot, onion and garlic), arugula and tahini dressing from Michele Cranston's "Fresh" + random meat leftovers from the freezer
Friday: salmon sashimi homemade pizza (which I forgot to photograph)
Saturday: roasted chicken filet with lots of garlic + a salad of mixed lettuce, pomegranate, red onion and balsamic vinegar 
Sunday: a big brunch (including American pancakes pictured bottom right) at our friends' place - we got so full that there was no need for the planned deer dinner

- I also post what we actually had for dinner the passed week (because it is fun to see if we actually followed the plan)
- there might be links to recipes, but the menu will mostly just be basic ideas for the dinners - often just based on what ever is in our fridge, freezer and cupboards
- Saturday and Sunday dinners will often not be planned ahead because we have a habit of buying whatever looks good in the store when we are out grocery shopping Saturday morning

things I like lately

these colors are some of my favorite things about autumn

- Sara slept until 7:45 am Monday morning and 8:15 am Saturday morning - sooo much better than 06-something
- the news about the birth of my best friend's second son
- visiting our friends and their 10 weeks old daughter
- an impecable seven course home cooked dinner at our friends' place Saturday night
- sorting through and clearing out old stuff - books, magazines, letters, postcards - at my parents' place last weekend
- finishing my first ever 8k run (in 55 min) - I'm starting to really dig this running thing 
- hearing Sølve and Sara sing "Mikkel rev" together
- my new Cos merino and silk jumper bought in Stockholm - it is super comfortable
- glorious sun and blue, blue skies after several really, really wet days - the weekend forecast is fantastic!
- baking plum muffins with plums from my in-laws' garden (I used my apple muffins recipe and swapped apples for plums)
- Sara fell asleep on my lap one afternoon after a no-nap day in barnehagen - which hardly ever happens 
- julemarsipan - too early some will say; it is freshest and best now, I say
- spending the whole Friday with Sara (due to barnehagen being closed) 
- Sara with pigtails and ponytail - they don't last long though 
- Friday night with the husband, homemade pizza, red wine and The Voice 
- fire in the wood stove in the early am
- Ulrika's fish

that blue winter light

My sister posted a photo on Instagram today of running shoes on snow, with the caption "nå kommer den kalde fine tida" ("the nice and cold time is coming", a reference to a song by a Norwegian band called Jokke & Valentinerne) - which reminded me of these winter slide film photos I haven't shared yet. That blue winter light really is something special, don't you think? By the way, those white round things are carrot muffins with cream cheese frosting. A big favorite for me!

10 good things about today

- a productive day at the office
- seeing a rainbow from my office window
- a delicious fish soup for dinner, which Sara also liked
- making plum muffins (I used my apple muffins recipe)
- dealing with the apple harvest from the garden (peeled, diced and now in the freezer)
- wearing my hair up + my Georg Jensen Moonlight Grapes pendant (a gift from Sølve)
- drinking white wine and watching tv (whilst writing this) with my favorite man in the whole world
- listening to a rather interesting radio report about landscaping whilst driving home from the office
- big hugs from Sara
- fresh bed linen

- Sara covering herself in sand at the beach in Spain and then having a blast in the little waves

everyday life
















I have started using my digital slr - Canon 40D with 50 mm lens - more again. I have used the iPhone camera so much lately, I had almost forgotten how good photos actually can get when I use a "real" camera. These shots were all taken around the house and out the windows the last couple of weeks. Yes, I do love a good sky.

spring contrasts

It is raining cats and dogs today. There was so much water in the road some places, it felt like being in a car wash whilst driving on the highway. Luckily it got better this evening when I was out running with my friend M. I did get soaked to the skin though. A hot shower followed by a spicy pumpkin soup hit just the right spot. This collection of spring contrasts brightens up this wet, wet day, don't you think?

Wednesday: kålstuing (creamed cabbage), sausages and boiled potatoes
Thursday: salmon pasta
Friday (at my parents' place): bacalao  
Saturday (at our friends' place): a scrumptious seven course dinner
Sunday: Grandiosa frozen pizza
