what's for dinner, week 7/2013

Monday and Wednesday dinners, week 6

Monday: stew with leftover meat from Saturday + potatoes, carrots, broccoli, red onion, mushrooms and rowan berry jelly on the side
Tuesday: baked salmon and a salad of mixed lettuce, apple, red onion, avocado and balsamic vinegar 
Wednesday: broccoli and kale soup
Thursday: skrei, spinach and chickpeas (side dish inspired by the recipe on page 34 in this Rema 1000 leaflet)
Friday: fresh shrimp sandwiches

What we actually had for dinner last week:

Monday: Sunday leftovers
Tuesday: Tuscan white bean soup
Wednesday: baked panfried skrei filets, roasted vegetables and a butter/cream/garlic/parsley sauce
Thursday: tortillas filled with homemade meatballs (from the freezer), guacamole and a mixed salad
Friday: a repeat of Wednesday's dinner
Saturday: grilled filet mignon and ratatouille
Sunday: roasted leg of lamb, boiled potatoes and carrots, roasted Brussel sprouts and gravy

contrasts








This month's challenge over at NIB (Norwegian interior blogs) is contrasts. I won't have time to take any new photos in daylight before the contest deadline, so these old iPhone photos (processed with VSCO Cam app) will have to do.

Here are some typical contrasts in my home; old and new furniture side by side, clean lines vs rough surfaces, silverware and a golden gnome.

Eigerøy, part II

In early December I packed the car and took Sara for a roadtrip about 5,5 hours south of Bergen, to an island called Eigerøy, to spend time with a couple of my closest girlfriends and their kids at a lovely holiday home. Such an idyllic place! It was freezing cold though. The kind of cold that when you take off your mittens for just a few minutes, you seriously fear of getting frostbite. The photos above where taken whilst out on a little walk to get Sara to nap in the pram. It was the first time in a long time I felt instantly super inspired to shoot film. Winter light by the sea side is just amazing!

you win some and you loose some



My daughter Sara (15 months old) is no big fan of dinner at the moment. She eats sausages and whole grain macaroni, and that's about it. For the most part, she doesn't even want to taste new dinner foods. We don't give up trying though (even if the situation seems a bit hopeless sometimes...), so today I made soup. 

I made carrot soup with red lentils inspired by Molly's lentil soup (one of my favorite soups ever). It is very easy to make and really yummy. 

4 small carrots
1/2 red onion
1 clove of garlic
1 fistful of red lentils 
olive oil
ca 1 teaspoon ground cumin
a tiny bit of chorizo sausage 
1 stock cube
1/2 liter of water

Fry onion, garlic and chorizo in olive oil. Add carrots, lentils, cumin, stock cube and water. Boil until tender, puree, enjoy. 

After some luring, Sara did eventually eat a good portion of the soup. Score! Not at the table though. She kept walking back and forth to me, eating one little spoon full at a time. Maybe tomorrow she will eat by the table. 

In other news; I just spent two hours trying to get Sara to sleep. Poor little overtired girl really struggled to settle down tonight. I get so exhausted by situations like this! Luckily there will be dinner (made by Sølve) and a glass of red wine in a moment. Cheers!

Something completely different: Just wanted to let you know that I have added word verification for commenting. Personally I find this thing annoying and sometimes I don't comment on other blogs because of it. But I get too many annoying spam comments every day, so I hope this will prevent it.

what's for dinner, week 6/2013

Monday vegetable soup

Monday: Sunday leftovers
Tuesday: Tuscan white bean soup
Wednesday: baked skrei filets and vegetables (what ever looks good in the store)
Thursday: homemade meatballs (from the freezer), guacamole and a mixed salad

We are spending the weekend at Voss with family, so no more dinner planning this week.

What we actually had for dinner last week:

Monday: what ever is in the fridge pureed vegetable soup (squash, leek, celery, parsley root, parsnip, garlic, fresh parsley, a tiny bit of chorizo, creme fraiche, stock cubes, black pepper and ground cumin)
Tuesday: chicken tortilla soup (one of the first dinners I learnt to make - I will post the recipe soon) lasagna, a simple salad of mixed lettuce, cucumber, red bell pepper and balsamic vinegar, and baguettes with garlic butter
Wednesday: pan fried cod filets, spinach and chickpeas (side dish inspired by the recipe on page 34 in this Rema 1000 leaflet) lasagna leftovers
Thursday: beef stir fry whole grain spaghetti with herbed cream cheese, arugula, green bell pepper, spring onion and pan fried chicken filet with chicken & steak spice mix from Santa Maria
Friday: salmon sashimi tandoori chicken, mango with coriander
Saturday: first course: pan fried cod tounges, main course: baked skrei filets, boiled potatoes and mashed green peas
Sunday: roasted rosemary veal, pan fried Brussel sprouts and mashed potatoes with truffle oil

instant fail


I have no idea what I'm doing with a polaroid camera. Did the film stay in the camera for too long (ca two years) maybe?

Edit: I used The Impossible Project's PX 680 Color Shade film. I don't know the name of the camera (borrowed from my sister), but I think it has something to do with 600.

Do you have any advice or tips regarding flying/solo roadtrips with a baby?

I did my first solo roadtrip with Sara when she was three months old. We drove from Bergen to our hometown Sandnes, which is a 4,5 hours drive - including two ferry rides that are 45 minutes and 25 minutes long - which makes it a nice and pleasant drive. She slept the whole time, except for on the ferries when I changed her diaper and nursed her. I was quite nervous about the trip beforehand, but luckily it turned out to be a walk in the park.

We have now done this trip several times and it has so far been just fine. (The only other solo roadtrips I have done with Sara have been max 1,5 hour.) Sara seems to enjoy driving and sleeps well in the car. I do try though to time departure to Sara's nap time, so that she spends as little time as possible awake. She tends to get a little grumpy after a while. Normally that is when we are pretty close to our destination. Perfect timing, baby! Music and singing is normally the cure for this grumpy baby. I always change her diaper and feed her on the ferries, and now that she walks, I let her walk around as much as possible. We have so far not needed any other breaks than the ferries.

I did not fly with Sara until she was 10 months old. I wasn't ready for it before that. I was too nervous she would freak out and I would be unable to deal with it. At 10 months I felt that her mood and temper were more predictable, so I felt more confident that flying would not turn in to a nightmare. Our first flight was one hour from Bergen to Trondheim. My mum was already on the same plane (from Stavanger), so I wasn't all alone. Sara was an angel and I was happy.

My first real solo flight with Sara was when she had just turned one year. We flew to the arctic, to Tromsø, to visit my sister and her boyfriend. It is a 2,5 hours direct flight; longer when flying via Oslo - we did both. Sara didn't nap at all on the way north, which of course made her overtired and hand full to deal with when sitting in the middle of a three seats row... She fell asleep on my lap on the way home, which made the flight much more pleasant.

A few practical tips:

- chose your flight times with care - if you can, you want to avoid an overtired, grumpy baby
- travel light (always) - everything is easier when you don't have a ton of luggage to deal with
- borrow stuff on arrival - if you can, borrow pram, car seat, travel bed, high chair - it makes traveling light much easier!
- use a baby carrier - two free hands are so much better than one (Sara loves being carried, so I didn't bring the pram)
- use a small backpack (I use Kånken) as your cabin luggage - again; two free hands are better than one
- pack your cabin luggage with care - keep it light yet well equipped; diapers, baby wipes, extra set of baby clothes in case of emergency, baby food, a few toys, a few waste bags (for diapers, dirty clothes, what ever), water and a snack for yourself    
- pack your coat in the checked luggage - you don't need it until you get your luggage back and it is really nice to not lug it around the airport
- chose the baby's travel outfit with care - chose clothing that is not too warm/too cold (layers are good) and make changing diapers as easy as possible (those airplane toilets are solo tiny!)
- chose your own travel outfit with care - if you breastfeed, wear a breastfeeding friendly top, otherwise dress not too warm - carrying your baby/baby on your lap will make you warm enough
- use a pacifier clip - you don't want your baby to loose the precious pacifier

1. Motherhood is fantastic yet exhausting. It feels like the most important role I have ever had in my entire life. I think the constant adjusting to new routines (one nap or two naps during daytime? learning to eat by herself, learning to like new foods - everyday stuff like that) is one of the biggest challenges. Also, the lack of time to do exactly what I want, when I want. Luckily Sara has mostly been a good sleeper, so I never really feel very sleep deprived.

2. I'm having an extra long maternity leave (Norwegian parents may choose to take a total of 46 weeks of leave at 100 per cent pay or 56 weeks at 80 per cent pay), so I'm not going back to work until the end of September. Sara will be in kindergarten.

I think Norway is a safe place to raise children. We have a great welfare system, plenty of kindergartens, good schools and generally great values. I don't think there is anything I don't like about raising children here.

Kara shoots film



Why do you shoot film, Kara?

The first gift my father gave my mother after cashing in his first big paycheque was a Canon AE-1. 35 years later, that is the same camera I am using today. Ever since my mother let me use that camera I have had a very emotional connection with it. Before starting with film, I would practice on my DSLR, knowing that if this were film, I would only have one shot to get my exposure right. This was a welcomed challenge for me. Shooting with film forces me to analyze every aspect of the photo I'm taking, from the perfect lighting to the correct shutter speed. I love the excitement of picking up a newly developed roll of film, I love the tones film creates that cannot be mirrored in photoshop, I love manually setting up my camera to do a double exposure. To me, film captures memories in a crisp and beautiful way to which digital photography cannot quite compare.

a walk in the fog











iPhone photos; wish I had brought my film camera too

A few weeks ago we woke up to a city all wrapped up in a thick, white blanket of fog. I always go for a walk during Sara's nap time (it is so much easier to get her to sleep in the pram than indoors during daytime + I love to get some fresh air and a little exercise) - in all kinds of weather. I'm very happy that I decided to go to Svartediket on this foggy day. As you can see, it was pretty amazing. Nature really gives me a kick sometimes!

Wednesday: pan fried cod filets, spinach and chickpeas (side dish inspired by the recipe on page 34 in this Rema 1000 leaflet)
Thursday: beef stir fry
Friday: salmon sashimi

Monday: a salad made of chicken leftovers from Sunday + mixed lettuce, mango, red onion, snap peas, sweet chili sauce and rice
Tuesday: vegetable soup salad leftovers from Monday in tortillas
Wednesday: white beans, tomato and feta salad pasta bolognese
Thursday (at my parents' place): this cusk dish
Friday (at my parents' place): fresh shrimp sandwiches
Saturday (at our friends' place): a fantastic four course dinner with tuna, mojito granita, duck and an ice cream kind of dessert + Champagne, of course!
Sunday: homemade meatballs, roasted potato wedges and store bought fresh tortellini filled with spinach and ricotta

Eigerøy, part I

Such an idyllic place! It was freezing cold though. The kind of cold that when you take off your mittens for just a few minutes, you seriously fear of getting frostbite. The photos above where taken whilst out on a little walk to get Sara to nap in the pram. It was the first time in a long time I felt instantly super inspired to shoot film. Winter light by the sea side is just amazing! I have hardly shot film since - damned dark January!
