It has been nearly two months since I last planned our weekday dinners properly. I have missed it, but to be honest, I needed a break. There is a lot going on these days (more about that later), so I needed to just go with the flow - which means there has been too many mediocre, not very healthy dinners lately. Time to remedy that!
Monday: various leftovers; tortillas filled with homemade meatballs (from the freezer), rice and a mango melon salad with fresh coriander (which kept surprisingly well in the fridge since Friday)
Tuesday: roasted beetroot salad; roasted beetroots, bacon, arugula, feta, quiona, red onion and roasted/salted pumpkin seeds (I love the combination of the sweetness from the beets and the salty, tangy taste of the feta)
Wednesday: broccoli soup (from the freezer) with homemade croutons
Thursday: it's the International Workers' Day and we all have the day off, so I will put Sølve in charge of the season's first bbq dinner in our garden (the weather forecast says sun)
Friday: salmon sashimi with ponzu sauce (time to get back to this tasty Friday tradition)

- Saturday and Sunday dinners will often not be planned ahead because we have a habit of buying whatever looks good in the store when we are out grocery shopping Saturday morning
