what's for dinner, week 6/2013

Monday vegetable soup

Monday: Sunday leftovers
Tuesday: Tuscan white bean soup
Wednesday: baked skrei filets and vegetables (what ever looks good in the store)
Thursday: homemade meatballs (from the freezer), guacamole and a mixed salad

We are spending the weekend at Voss with family, so no more dinner planning this week.

What we actually had for dinner last week:

Monday: what ever is in the fridge pureed vegetable soup (squash, leek, celery, parsley root, parsnip, garlic, fresh parsley, a tiny bit of chorizo, creme fraiche, stock cubes, black pepper and ground cumin)
Tuesday: chicken tortilla soup (one of the first dinners I learnt to make - I will post the recipe soon) lasagna, a simple salad of mixed lettuce, cucumber, red bell pepper and balsamic vinegar, and baguettes with garlic butter
Wednesday: pan fried cod filets, spinach and chickpeas (side dish inspired by the recipe on page 34 in this Rema 1000 leaflet) lasagna leftovers
Thursday: beef stir fry whole grain spaghetti with herbed cream cheese, arugula, green bell pepper, spring onion and pan fried chicken filet with chicken & steak spice mix from Santa Maria
Friday: salmon sashimi tandoori chicken, mango with coriander
Saturday: first course: pan fried cod tounges, main course: baked skrei filets, boiled potatoes and mashed green peas
Sunday: roasted rosemary veal, pan fried Brussel sprouts and mashed potatoes with truffle oil

about this project

- every Monday I post the week's menu
- I also post what we actually had for dinner the passed week (because it is fun to see if we actually followed the plan)
- there might be links to recipes, but the menu will mostly just be basic ideas for the dinners
- Saturday and Sunday dinners will often not be planned ahead because we have a habit of buying whatever looks good in the store when we are out grocery shopping Saturday morning
- each post will be illustrated with one of my food related photos, either from my archives or a new one
