what's for dinner, week 23

We are so hooked on ratatouille lately!

Monday: leftover ratatouille and whole grain spaghetti
Tuesday: a repeat of last Tuesday
Wednesday: dal with rhubarb (via My Cooking Diary)
Thursday: beetroot soup
Friday: gratinated cauliflower with bacon

Sara and I are visiting family in Trøndelag this weekend, so the rest of this week's dinners will be made by them.

What we actually had for dinner last week:

Monday: leftover ratatouille with whole grain pasta
Tuesday: a salad with little gem lettuce, endive, shredded chicken, mango, cucumber and red onion + rice on the side (photo)
Wednesday: baked salmon filet with spinach and chickpeas (photo)
Thursday: white beans, tomato and feta salad
Friday: fresh shrimp sandwiches (photo)
Saturday: fish/meat of the day with vegetables: pan grilled tuna steak and ratatouille
Sunday: fish/meat of the day with vegetables: leftover ratatouille with homemade minced meat and cheese filled ravioli
