what's for dinner, week 21

root vegetables, tomato, salmon and scampi soup

Monday: homemade fishcakes (from the freezer) and roasted carrot sticks and potato wedges
Tuesday: salad with chicken filet and pomegranate  
Wednesday: endive salad with avocado, apple and mixed nuts vinaigrette
Thursday: white bean, tomato and feta salad

We are spending the long weekend at Voss with family, so the rest of this week's dinners will be planned with/by them.

What we actually had for dinner last week:

Monday: Sunday leftovers mixed with fresh cheese filled ravioli
Tuesday: root vegetables and salmon stew root vegetables, tomato, salmon and scampi soup (photo above)
Wednesday: Tuscan white bean soup mushroom filled ravioli with red onion, fresh parsley and butter + chicken and bacon filled ravioli with pesto
Thursday/constitution day: slow roasted steak with ratatouille, dessert: ice cream buffet
Friday: salmon sashimi with ponzu sauce mussels
Saturday: meat/fish of the day with vegetables: tacos
Sunday: meat/fish of the day with vegetables: homemade pizza
