One week ago I launched The Dinner Project book. Now it's time to give away a softcover version of the book.
To participate in this giveaway I want you to answer this question: What is your favorite quick and easy everyday dinner?
A winner will be picked at random in one week, on Friday February 4 at ca 8 pm CTE+1.
EDIT: Sorry! I wrote the wrong date when I posted this yesterday; it's supposed to be Friday February 11. So there is still plenty of time to participate!
In summer I love to cook japanese noodle and cucumber salad (yummy!). In winter a quick and easy dinner is mashed potatoes with spinach and a sunny-side-down-egg. Simple comfort food. Easy to make and so yummy.

ReplyDeleteIn Italy we call it "bruschetta" and I just love it..I could easily live only eating this for all my life!!!
Roasted potatoes with cheese & butter. (I use 3 different kind of cheese.) And green salat as garnish.

Well, I hope I'll get lucky this time! My favourite quick and easy everyday dinner is chicken soup with rice (no vegetables or noodles). And it's the only thing I can eat when I'm sick...

Cucumber, red onion, paprika, corn, lettuce etc.
Quick and snacky, and always de-lish.
Eggs + oyster sauce + long beans.
ReplyDeleteSkal den være veldig rask, så liker jeg stekt ris og egg med soyasaus og de grønnsakene jeg måtte finne i kjøleskapet. Stekt paprika med rista pinjekjerner, salt og pepper smaker også godt!
ReplyDeleteAn easy to make food I like to make is scrambled eggs with "everything" - I open the fridge and see what I can use, like sausages, vegetables, soy sauce or teriyaki... :)

Salmon baked in the oven with a sprinkle of lemonpepper and soyasaus. Usually Ill have Couscous and different vegise aside.

ReplyDeleteI like to cook a carrot soup with fresh coriander, bread with butter, cheese, ham, gherkin...and a fruit.
Pasta with any kind of sauce but mostly the tomato, butter and onion sauce.
ReplyDeleteMy favourite quick dinner is pasta with what I have in the fridge: dried tomatoes, mushrooms, pesto, garlic, basilicum, olive oil. This is alwasy a winner accompanied by good wine.

ReplyDeleteI have a super quick an easy recipe of my own : Cook pasta(preferably Penne)for about 10 minutes. Then in a pan, fry some garlic(2 or 3 cloves) with butter. Add pasta to the pan and pour 2 eggs into it. Mix all together, add a pinch of salt, black pepper and one or two spoons of grated Parmesan cheese. Yum!

Dinners change with the season. Winter time, my comfort food is: Red lentils cooked with Indian spices, And shredded carrot, popped mustard seeds, cilanto and chilli with yogurt on the side. Summer time is Soba noodles with a walnut-miso sauce and shredded raw veggies.

During the warmer months: Soba noodles, with a miso-walnut sauce and shredded raw veggies.

actually i have many but will leave it to these three as i had them so many times and still love them:

warm potatosalad with avocados, cherry tomatos, lots of cress and oliveoil
and a "caro" as my boyfriend's family call it: a simple slice of fresh bread with cheese (preferably with figmustard on top of it)

ReplyDeleteQuick and easy? Boil spaghetti, take a tin of anchovies and heat it in its oil in a frying pan, slice a red chili, remove the seeds and fry it in the anchovies and oil - and when that's all done, add the spaghetti and stir. Serve in a bowl. Simple and amazing.
ReplyDeleteIt's got to be pasta, tuna, cherry tomatoes and grated sharp cheddar. For super lazy days, I don't even heat up the toppings, just scoff it all cold!

ReplyDeleteoh fantastic! i have to say, my go to meal this past year, in any season, is molly's tomatoe sauce with butter and onions. it goes with absolutely everything.
ReplyDeleteGrilled Cheese...sometimes I throw a fried egg in the sandwich too! Dip it in some creamy tomato soup and call it a night!

layered tomatoes and mozzarella with sprinkled pepper with bread and olive oil and balsamic vinegar. mixed berries and yogurt with a little granola for dessert! very quick but still so delicious! takes all of 5 minutes really, a great treat after a hectic day of work and school.
ReplyDeleteMy favourite easy, one-pot dinner is a Japanese soup, made from Miso paste, water with added shitake mushrooms (dried) yam-gelatine-cake (with as super texture and look), dried seaweed, a few soba noodles, chopped and fried tofu and whatever veggies need using at the bottom of the fridge. It's hearty, light, super easy and filling - what more would you want?

ReplyDeletepoteter+sellerirot+gulrøter+purre kokes i vann og buljong, moses med stavmikser når mørt, tilsett en dæsj fløte og salt+pepper - og vips! ekstra stas servert med litt sprøstekt bacon på toppen. og selvsagt litt ost i. og godt brød til å dyppe.

ReplyDeleteOh. Dinner. Quick dinner. Hum. "Throw together 5 minute soup". I learnt how to make it while watching a Korean variety show. Just take some miso, some random sauces, tofu, a bit of veggies, kimchi if you've, put into pot, add water, let simmer for ten minutes. Add some noodles if you're hungry.
ReplyDeleteWhenever I make that at my parents' I get strange looks... they really don't understand where my culinary tastes come from.
My favorite dinner is pasta with a creamy tomato cheese sauce, with some garlic bread on the side. Yum!
ReplyDeleteusually it's pasta, but if i can get wild salmon, i like to bake it with lemon pepper and sliced lemons on top. or marinate salmon in maple syrup, soy sauce and garlic, and then bake it! that's my true favorite. baking fish is so easy!
ReplyDeletemy favourite quickie at the moment is raw seavegetable spaghetti, cooked with yummy spices till a soup kinda thing :) some onion and mushrooms in there too, and you've' got a tasty, healthy, warming, filling and exiting bowl of February goodness in 15 minutes!
ReplyDeleteoh, hard one! i'd say pesto pasta + a good baguette. or some rye bread with avocado on top. this is best in summer, when all of the basil is at its peak. :)

ReplyDeleteViss det skal gå veldig raskt så brukar vi å lage wraps med eit eller anna vi har i kjøleskapet, men helst fenalår, philadelfiaost, ruccola, rødløk og avokado.

In all seasons I like some pasta with dried tomatoes, black olives, chicken, Parmesan cheese and basil leaves. Seasoned with olive oil and salt.
ReplyDeleteAnd if not, another dinner I often usually do is a typical sandwich of Mallorca called "pa amb oli". Consists of slices of brown bread with garlic, tomato, olive oil and sausage typical of our island (Mahon cheese, sobrasada, camaiot, ham, etc ...) I simply love soup. This is so simple and delicious, especially when it's cold outside. Yummy! And sometimes, I make a simple and sweet granola.
ReplyDeleteWhen I can't think of anything else, I make whole wheat pasta and cover it with a little marinara sauce to which I've added some sauteed zucchini, tomato and red pepper.

ReplyDeleteDuring the warmer months, it's pasta with mashed avocado, fresh tomatoes and parmesan.
When I have no time at all (or if I am too lazy) it's just pasta, olive oil, parmesan.
I know I missed it, but had to add the fav dinner...mastocholi! (SP?) Brown gr beef or pork, add spaghetti sauce & honey *liberally*, boil noodles, and mix together. Better the second day! top with mozzarella or Parmesan.
ReplyDeleteWhen feeling lazy, I usually make pasta with a roasted mushrooms, miso and grinded sesame seeds sauce. Its super fast and easy and always tastes different depending on the type of mushrooms available.
ReplyDeletemy favorite easy recipe is butter spaghetti. just some good quality butter mixed with diced tomatos + tomato sauce, and toss in some spaghetti. sprinkle parmesan and voila, easy and yummy.

The easiest everyday dinner for me is baked chicken fillets. I usually marinade several fillets and refrigerate them. I just take out as needed. For marinades there's herby like Rosemary//garlic/black pepper/coarse salt/oil. Or spicy - turmeric powder/coriander powder/cayenne powder.
ReplyDeleteFresh pasta with tomato sauce - consisting of chopped tomatoes,dried tomatoes, garlic, some onion and fresh basil. On top I put some parmasan. In addition I often eat some bread and olive oil. Yum!

ReplyDeleteSuper simple - cook some sliced mushrooms and then mix in a dollop of creme fraise, with a little bit of cheese, and some herbs and then serve on some toast or warm french bread. YUM.

ReplyDeleteIf alone, tartines (rub garlic clove on crusty bread, spread cooked white beans, mash with fork so they stay, olive oil and black pepper on top.
If with prince charming, pasta a la putanesca (saute in olive oil, schallot, anchovies and balck olives with 2 or 3 tomatoes, while pasta cooking. assemble in pan).Red wine, of course. Bon appétit!

ReplyDeletePut thin slices of hot or cold smoked salmon ontop of a big slice of brown soda bread, then mix horseradish sauce+crème fraiche together and dollop it ontop. A sprinkle of salted/pickled capers and... enjoy, YUM!

ReplyDeleteI like to mash an avocado with some lemon juice, salt, and pepper. Mash it so that there's still some good chunks of avocado. Then spread some mayo and/or dijon mustard on really thick and crunchy whole-grain toast, top with the avocado and eat open-faced style. There's enough avocado for two pieces of toast. Makes a healthy meal with a side salad. And it only takes about five minutes!

I like a grilled cheese and apple sandwich for a quick dinner. I use whatever cheese I have around (white cheddar or chevre are my favorites) and cut up thin slices of apple, sprinkle with a little bit of cinnamon and sugar, and then fry the sandwich with a little bit of butter.

ReplyDeleteOne of my quick dinner fix is a beet salad. The only thing you need to prepare for are the beets which are roasted in olive oil and oregano. Put that together with some arugula and goat cheese drizzle a dressing made of honey, lemon juice and oilve oil, and Vola!
