the dinner project, week 22


Monday May 31: Greek salad and whole grain rolls with butter

Tuesday June 1: pan fried filet mignon of beef (with salt and pepper), potato wedges and a salad (composed by Sølve) with grand rapids lettuce, tomatoes, canned corn, snow peas, store bought marinated cheese cubes, a few chopped Brazil nuts and sweet chili sauce on top (photo here, another one here)

Wednesday June 2: baked salmon filet with mustard mayonnaise, lemon pepper and shaved almond, blanched fresh green asparagus, and frozen peas + green beans mixed with fresh spring onion, a little lemon juice, garlic butter and Maldon salt (photo here)

Thursday June 3: chicken filets in orange chili sauce served with rice and a salad (photo above, another one here) (We used this recipe. It was good but way too sour.)

Friday June 4: first course: grilled scampi and red onion, second course: mussels and small potato wedges (inspired by the mussels and fries we had in Nice last summer) (photo here)

Saturday June 5: grilled wolffish marinated in a pesto parsley garlic mix, served with a salad (little gem lettuce, rocket, strawberries, cantaloupe melon and balsamic vinaigrette)

Sunday June 6: first course: salmon sashimi, second course: bbq skewers with beef, pork, onion and bell pepper served with baked potatoes and a salad of rocket, mango and sprouts
